Pfannekuchen/Pfannkuchen

From Lisa & Robert: This is a popular Sunday morning treat in our family. It’s known in many restaurants around the US as “Dutch Pancake” or “Dutch Baby”. We’ve seen a number of recipes, some of them quite complicated. This version, taken originally from some long-forgotten magazine and slightly modified through use, is easy, uncomplicated, and requires no special skills or ingredients.

Pfannkuchen or Pfannekuchen

1/4 c. butter
1 c. whole wheat flour
1 c. milk
4 eggs
1 T. (or less) sugar
1 t. vanilla
1/2 t. salt (use less if you use salted butter)

Preheat oven to 400° F. Put butter in a 10″ skillet and put in the oven for 5 minutes or until the butter has melted.

Combine remaining ingredients, beat until smooth. Pour the mixture into the skillet and bake 20 minutes, until puffy and brown on edges.

Sprinkle with lemon juice and powdered sugar, or top with fruit sauce. Serve hot.
